Thai Noodle Salad
Ingredients
  • 1/4 cup lime juice
  • 3 tablespoons fish sauce
  • 2 tablespoons sugar
  • 1 tablespoon chili-garlic sauce
  • 8 ounces dried rice noodles
  • 2 cups shredded cooked chicken
  • 1/2 cup chopped fresh cilantro leaves
  • 1/2 cup chopped fresh mint leaves
  • 1/4 cup chopped unsalted peanuts

Steps
  1. In a medium bowl, whisk together the lime juice, fish sauce, sugar and chili-garlic sauce until the sugar is dissolved.
  2. Bring a large pot of water to a boil. Add the rice noodles and cook until al dente, about 5 minutes. Drain and rinse with cold water.
  3. In a large bowl, combine the cooked noodles with the chicken, cilantro, mint and peanuts.
  4. Pour the dressing over the noodle mixture and toss to combine.
  5. Serve chilled or at room temperature.
