Ingredients
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 2 tablespoons freshly grated ginger
  • 1 large onion, chopped
  • 2 tablespoons green curry paste
  • 1 (14 ounce) can coconut milk
  • 1/4 cup water

Steps
  1. In a large skillet over medium heat, heat oil. Add garlic, ginger and onion; cook and stir until onion is tender. Stir in curry paste; cook and stir for 1 minute.
  2. Stir in coconut milk and water. Bring to a boil; reduce heat to low and simmer for 10 minutes.
  3. Serve over your favorite Thai dish.
