Ingredients
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1/4 teaspoon red pepper flakes
  • 2 cucumbers, thinly sliced
  • 1/4 cup chopped fresh cilantro

Steps
  1. In a small bowl, whisk together the rice vinegar, sugar, salt and red pepper flakes until the sugar and salt are dissolved.
  2. In a large bowl, combine the cucumbers and cilantro.
  3. Add the vinegar mixture to the cucumber mixture and toss to combine.
  4. Refrigerate for at least 30 minutes before serving.
