- 1/2 cup rice vinegar
- 2 tablespoons sugar
- 1 teaspoon salt
- 1/4 teaspoon red pepper flakes
- 2 cucumbers, thinly sliced
- 1/4 cup chopped fresh cilantro
- In a small bowl, whisk together the rice vinegar, sugar, salt and red pepper flakes until the sugar and salt are dissolved.
- In a large bowl, combine the cucumbers and cilantro.
- Add the vinegar mixture to the cucumber mixture and toss to combine.
- Refrigerate for at least 30 minutes before serving.
