Tex-Mex Lasagna
Ingredients
  • 1 pound ground beef
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes with green chilies, undrained
  • 1 (8 ounce) can tomato sauce
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

Steps
  1. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in the bell pepper and garlic; cook for 2 minutes. Add the beans, tomatoes, tomato sauce, chili powder, cumin, salt and pepper. Simmer for 20 minutes.
  2. In a greased 13x9-in. baking dish layer half of the beef mixture and 1 cup of cheese.
  3. Repeat layers ending with cheese.
  4. Bake uncovered at 350° for 25 minutes or until bubbly.
