- 1 cup bulgur wheat
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/4 cup olive oil
- 3 tablespoons freshly squeezed lemon juice
- 3 tablespoons chopped onion
- 2 medium tomatoes, diced
- 1/4 teaspoon salt
- Soak the bulgur in a bowl of cold water for 15 minutes.
- Drain and squeeze out any excess liquid.
- In a large bowl, combine the bulgur, parsley, mint, olive oil, lemon juice, onion and tomatoes.
- Mix together and season with salt to taste.
- Chill in the refrigerator for at least 1 hour before serving.
- Serve cold.
