Tabbouleh
Ingredients
  • 1 cup bulgur wheat
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1/4 cup olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 3 tablespoons chopped onion
  • 2 medium tomatoes, diced
  • 1/4 teaspoon salt

Steps
  1. Soak the bulgur in a bowl of cold water for 15 minutes.
  2. Drain and squeeze out any excess liquid.
  3. In a large bowl, combine the bulgur, parsley, mint, olive oil, lemon juice, onion and tomatoes.
  4. Mix together and season with salt to taste.
  5. Chill in the refrigerator for at least 1 hour before serving.
  6. Serve cold.
