Strawberry Rhubar…
Ingredients
  • 3 cups rhubarb, cut into 1/2-inch pieces
  • 3 cups strawberries, hulled and quartered
  • 2-1/4 cups sugar
  • 1/4 cup freshly squeezed lemon juice

Steps
  1. In a large saucepan, combine the rhubarb, strawberries, sugar and lemon juice. Cook over medium heat, stirring often, until the mixture comes to a boil. Reduce the heat to low and simmer for 15 minutes or until the jam thickens.
  2. Remove from the heat and let cool. Transfer to an airtight container and store in the refrigerator for up to two weeks.
