Ingredients
  • 2 tablespoons vegetable oil
  • 1/2 onion, diced
  • 1/2 red bell pepper, diced
  • 1 cup broccoli florets, chopped
  • 1 cup carrots, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 2 cups cooked white rice
  • 3 tablespoons soy sauce or tamari sauce (gluten-free if necessary)
  • 1 teaspoon sriracha sauce or chili garlic sauce (or more to taste)

Steps
  1. Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 3 minutes.
  2. Add the broccoli, carrots, garlic and ginger and cook for an additional 5 minutes.
  3. Add the cooked rice to the skillet and stir to combine. Cook for 3 minutes.
  4. Stir in the soy sauce or tamari and sriracha or chili garlic sauce. Cook for an additional 2 minutes.
  5. Serve hot.
