- 2 tablespoons vegetable oil
- 1/2 onion, diced
- 1/2 red bell pepper, diced
- 1 cup broccoli florets, chopped
- 1 cup carrots, chopped
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 2 cups cooked white rice
- 3 tablespoons soy sauce or tamari sauce (gluten-free if necessary)
- 1 teaspoon sriracha sauce or chili garlic sauce (or more to taste)
- Heat the oil in a large skillet over medium heat. Add the onion and bell pepper and cook for 3 minutes.
- Add the broccoli, carrots, garlic and ginger and cook for an additional 5 minutes.
- Add the cooked rice to the skillet and stir to combine. Cook for 3 minutes.
- Stir in the soy sauce or tamari and sriracha or chili garlic sauce. Cook for an additional 2 minutes.
- Serve hot.
