- 1/4 cup sesame oil
- 3 cloves garlic, minced
- 2 tablespoons minced fresh ginger
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 teaspoon Sriracha sauce
- 8 ounces uncooked soba noodles or thin spaghetti
- 1/2 red bell pepper, thinly sliced
- 1/2 green bell pepper, thinly sliced
- 1/2 cup matchstick-cut carrots
- In a small bowl, whisk together sesame oil, garlic, ginger, soy sauce, rice vinegar and Sriracha sauce.
- Bring a large pot of lightly salted water to a boil. Add soba noodles or thin spaghetti and cook for 8 minutes or until al dente; drain.
- In a large skillet over medium heat, stir-fry the red bell pepper, green bell pepper and carrots in the sesame oil mixture for 1 to 2 minutes.
- Add the cooked noodles to the skillet and toss to coat.
- Serve hot.
