Spicy Sesame Nood…
Ingredients
  • 1/4 cup sesame oil
  • 3 cloves garlic, minced
  • 2 tablespoons minced fresh ginger
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon Sriracha sauce
  • 8 ounces uncooked soba noodles or thin spaghetti
  • 1/2 red bell pepper, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1/2 cup matchstick-cut carrots

Steps
  1. In a small bowl, whisk together sesame oil, garlic, ginger, soy sauce, rice vinegar and Sriracha sauce.
  2. Bring a large pot of lightly salted water to a boil. Add soba noodles or thin spaghetti and cook for 8 minutes or until al dente; drain.
  3. In a large skillet over medium heat, stir-fry the red bell pepper, green bell pepper and carrots in the sesame oil mixture for 1 to 2 minutes.
  4. Add the cooked noodles to the skillet and toss to coat.
  5. Serve hot.
  6. Enjoy!
