Ingredients
  • 1 pound bacon
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 6 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 2 pounds collard greens, stems removed and leaves chopped into 1-inch pieces
  • 1/4 cup apple cider vinegar
  • Salt and pepper to taste

Steps
  1. In a large skillet over medium-high heat, cook bacon until crisp. Remove from the pan and set aside.
  2. Add olive oil to the pan. Add onion and garlic and cook until softened, about 5 minutes.
  3. Add red pepper flakes and collard greens. Cook for 10 minutes or until greens are wilted.
  4. Add apple cider vinegar, salt and pepper. Cook for an additional 5 minutes.
  5. Serve hot with bacon crumbled on top.
