- 1 pound bacon
- 2 tablespoons olive oil
- 1 large onion, diced
- 6 cloves garlic, minced
- 1 teaspoon red pepper flakes
- 2 pounds collard greens, stems removed and leaves chopped into 1-inch pieces
- 1/4 cup apple cider vinegar
- Salt and pepper to taste
- In a large skillet over medium-high heat, cook bacon until crisp. Remove from the pan and set aside.
- Add olive oil to the pan. Add onion and garlic and cook until softened, about 5 minutes.
- Add red pepper flakes and collard greens. Cook for 10 minutes or until greens are wilted.
- Add apple cider vinegar, salt and pepper. Cook for an additional 5 minutes.
- Serve hot with bacon crumbled on top.
