- 2 lbs boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Place chicken breasts in slow cooker.
- In a medium bowl, combine bell peppers, onion, garlic, olive oil, chili powder, cumin and smoked paprika. Mix until combined.
- Pour vegetable mixture over chicken in slow cooker. Season with salt and pepper.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
- Shred chicken with two forks and serve warm in tortillas or over rice.
