Slow Cooker Chickā€¦
Ingredients
  • 2 lbs boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste

Steps
  1. Place chicken breasts in slow cooker.
  2. In a medium bowl, combine bell peppers, onion, garlic, olive oil, chili powder, cumin and smoked paprika. Mix until combined.
  3. Pour vegetable mixture over chicken in slow cooker. Season with salt and pepper.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through.
  5. Shred chicken with two forks and serve warm in tortillas or over rice.
