Ingredients
  • 2 cups of diced vegetables of your choice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

  1. 1. Preheat oven to 400°F.
  2. 2. Place diced vegetables on a baking sheet.
  3. 3. Drizzle with olive oil and season with salt and pepper.
  4. 4. Roast in preheated oven for 20-25 minutes, stirring once halfway through cooking time.
  5. 5. Serve hot.
