Ingredients
  • 1 red pepper
  • 1 yellow pepper
  • 1 red onion
  • 2 carrots
  • 2 tablespoons olive oil
  • Salt and pepper

Steps
  1. Preheat oven to 400°F.
  2. Cut the vegetables into 1-inch cubes and place in a large bowl.
  3. Toss with olive oil, salt, and pepper.
  4. Thread the vegetables onto skewers.
