Quinoa Salad
Ingredients
  • 1 cup quinoa
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh parsley
  • 3 tablespoons olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • Salt and freshly ground black pepper to taste

Steps
  1. Rinse the quinoa in a fine mesh strainer.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa and reduce the heat to low. Simmer for 15 minutes, or until all of the water is absorbed.
  3. Transfer the cooked quinoa to a large bowl and let cool.
  4. Add the red onion, bell pepper, parsley, olive oil, lemon juice, salt and pepper. Stir to combine.
  5. Serve chilled or at room temperature.
