- 1 cup quinoa
- 1/4 cup olive oil
- 1/4 cup freshly squeezed lime juice
- 1 teaspoon honey
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- 2 avocados, diced
- 2 mangoes, diced
- Cook the quinoa according to package instructions.
- In a small bowl, whisk together the olive oil, lime juice, honey and cumin.
- Season with salt and pepper, to taste.
- In a large bowl, combine the cooked quinoa, avocados and mangoes.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or refrigerate until ready to serve.
