Parmesan Risotto
Ingredients
  • 4 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 cups Arborio rice
  • 1/2 cup dry white wine
  • 5 cups chicken broth, heated
  • 1/2 cup freshly grated Parmesan cheese

Steps
  1. Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the rice and cook, stirring constantly, for 1 minute.
  3. Add the wine and cook until it has been absorbed.
  4. Add 1 cup of chicken broth to the rice. Simmer and stir until it has been absorbed.
  5. Continue adding broth 1 cup at a time, stirring constantly and allowing each cup to be absorbed before adding the next. This process should take about 20 minutes.
  6. Remove from heat and stir in Parmesan cheese. Serve immediately.
