Heat the olive oil in a large saucepan over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
Add the rice and cook, stirring constantly, for 1 minute.
Add the wine and cook until it has been absorbed.
Add 1 cup of chicken broth to the rice. Simmer and stir until it has been absorbed.
Continue adding broth 1 cup at a time, stirring constantly and allowing each cup to be absorbed before adding the next. This process should take about 20 minutes.
Remove from heat and stir in Parmesan cheese. Serve immediately.
