Pad Thai Noodles
Ingredients
  • 1/2 cup dry Thai rice noodles
  • 2 tablespoons vegetable oil
  • 1 garlic clove, minced
  • 1 large egg, lightly beaten
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons lime juice
  • 1/4 cup chopped roasted peanuts
  • 1/4 cup chopped fresh cilantro

Steps
  1. Soak the rice noodles in hot water for 15 minutes.
  2. Heat the oil in a large skillet over medium heat. Add the garlic and stir-fry for 30 seconds.
  3. Add the egg and scramble until cooked through. Add the fish sauce, sugar, and lime juice. Stir to combine.
  4. Add the noodles and stir-fry for 2-3 minutes or until heated through.
  5. Stir in the peanuts and cilantro. Serve hot.
