- 1/2 cup dry Thai rice noodles
- 2 tablespoons vegetable oil
- 1 garlic clove, minced
- 1 large egg, lightly beaten
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 2 tablespoons lime juice
- 1/4 cup chopped roasted peanuts
- 1/4 cup chopped fresh cilantro
- Soak the rice noodles in hot water for 15 minutes.
- Heat the oil in a large skillet over medium heat. Add the garlic and stir-fry for 30 seconds.
- Add the egg and scramble until cooked through. Add the fish sauce, sugar, and lime juice. Stir to combine.
- Add the noodles and stir-fry for 2-3 minutes or until heated through.
- Stir in the peanuts and cilantro. Serve hot.
