- 1 lb. boneless, skinless chicken breasts, cut into 1-inch cubes
- 2 cloves garlic, minced
- 1 onion, diced
- 8 oz. mushrooms, sliced
- 3 cups chicken broth
- 1 cup heavy cream or half and half
- 1 tsp. Italian seasoning
- Salt and pepper to taste
- 8 oz. penne pasta
- In a large skillet over medium heat, cook the chicken until golden brown and cooked through.
- Add the garlic, onion and mushrooms to the skillet and cook until the vegetables are tender.
- Stir in the chicken broth, cream or half and half, Italian seasoning, salt and pepper.
- Bring to a simmer and add in the penne pasta.
- Simmer for 15-20 minutes or until the pasta is cooked through.
- Serve hot.
