Moroccan Couscous…
Ingredients
  • 1/2 cup couscous
  • 1/2 cup boiling water
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • Salt and pepper to taste

Steps
  1. In a large bowl, combine the couscous and boiling water. Cover and let stand for 5 minutes.
  2. In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, salt and pepper.
  3. Pour the dressing over the couscous and toss to combine.
  4. Serve.
