- 1/2 cup couscous
- 1/2 cup boiling water
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- In a large bowl, combine the couscous and boiling water. Cover and let stand for 5 minutes.
- In a small bowl, whisk together the olive oil, lemon juice, cumin, coriander, salt and pepper.
- Pour the dressing over the couscous and toss to combine.
- Serve.
