Mexican Cornbread…
Ingredients
  • 1 pound ground beef
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper
  • 1 (16 ounce) can chili beans, undrained
  • 1 (14.5 ounce) can diced tomatoes with jalapeno peppers, undrained
  • 1 (8.5 ounce) package cornbread mix
  • 3/4 cup shredded Cheddar cheese

Steps
  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch pie plate.
  2. In a large skillet over medium heat, cook the beef, onion and bell pepper until the beef is browned and the vegetables are tender. Drain off any excess fat.
  3. Stir in the chili beans and tomatoes. Simmer for 10 minutes.
  4. Pour the mixture into the prepared pie plate.
  5. In a medium bowl, prepare the cornbread mix according to package directions.
  6. Spread the batter over the meat mixture in the pie plate.
  7. Bake at 375 degrees F (190 degrees C) for 25 minutes or until golden brown.
  8. Sprinkle with cheese and bake an additional 5 minutes or until cheese is melted.
  9. Let cool 10 minutes before serving.
