Ingredients
  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • 2 cups chicken broth
  • 2 cups shredded Monterey Jack cheese or Mexican blend cheese

Steps
  1. Heat oil in a medium saucepan over medium heat. Add onion and garlic; cook and stir until softened, about 5 minutes.
  2. Stir in chili powder, cumin, and cayenne pepper. Cook for 1 minute more.
  3. Pour in chicken broth; bring to a simmer. Reduce heat to low and stir in Monterey Jack or Mexican blend cheese until melted.
  4. Transfer to a fondue pot and keep warm.
