- 2 tablespoons olive oil
- 1/2 cup chopped onion
- 1 clove garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 2 cups chicken broth
- 2 cups shredded Monterey Jack cheese or Mexican blend cheese
- Heat oil in a medium saucepan over medium heat. Add onion and garlic; cook and stir until softened, about 5 minutes.
- Stir in chili powder, cumin, and cayenne pepper. Cook for 1 minute more.
- Pour in chicken broth; bring to a simmer. Reduce heat to low and stir in Monterey Jack or Mexican blend cheese until melted.
- Transfer to a fondue pot and keep warm.
