- 3 cups carrots, peeled and cut into 1-inch pieces
- 1/4 cup butter, cubed
- 1/4 cup heavy cream
- Salt and pepper to taste
- Place carrots in a medium saucepan and cover with water. Bring to a boil, reduce heat and simmer until tender, about 10 minutes.
- Drain the carrots and return to the pan. Add butter, cream, salt and pepper.
- Mash with a potato masher until desired consistency is reached.
- Serve warm.
