Mashed Carrots
Ingredients
  • 3 cups carrots, peeled and cut into 1-inch pieces
  • 1/4 cup butter, cubed
  • 1/4 cup heavy cream
  • Salt and pepper to taste

Steps
  1. Place carrots in a medium saucepan and cover with water. Bring to a boil, reduce heat and simmer until tender, about 10 minutes.
  2. Drain the carrots and return to the pan. Add butter, cream, salt and pepper.
  3. Mash with a potato masher until desired consistency is reached.
  4. Serve warm.
