- 3/4 cup chia seeds
- 2 cups coconut milk
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cardamom
- 1 ripe mango, diced
- In a medium bowl, combine the chia seeds, coconut milk, honey, vanilla extract and cardamom.
- Mix until all ingredients are thoroughly combined.
- Cover and refrigerate for at least 4 hours or overnight.
- Stir in the diced mango before serving.
