Lemon Poppy Seed …
Ingredients
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3 tablespoons poppy seeds
  • 1/3 cup vegetable oil
  • 1 egg, lightly beaten
  • 1 cup milk
  • Grated zest of 1 lemon

Steps
  1. Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper liners.
  2. In a large bowl, combine flour, sugar, baking powder, salt and poppy seeds. Make a well in the center and add oil, egg and milk. Stir just until moistened.
  3. Fill muffin cups 2/3 full and sprinkle with lemon zest. Bake for 20 to 25 minutes or until golden brown.
  4. Cool in pan on wire rack for 5 minutes before removing from pan.
