Lebanese Fattoush…
Ingredients
  • 2 cucumbers, diced
  • 1 large tomato, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, diced
  • 1/2 cup parsley, chopped
  • 1/4 cup mint leaves, chopped
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Steps
  1. In a large bowl combine all the vegetables.
  2. Add lemon juice and olive oil and mix until everything is coated.
  3. Season with salt and pepper to taste.
  4. Serve cold or at room temperature.
