- 2 cucumbers, diced
- 1 large tomato, diced
- 1 green bell pepper, diced
- 1/2 red onion, diced
- 1/2 cup parsley, chopped
- 1/4 cup mint leaves, chopped
- 1/4 cup lemon juice
- 2 tablespoons olive oil
- Salt and pepper to taste
- In a large bowl combine all the vegetables.
- Add lemon juice and olive oil and mix until everything is coated.
- Season with salt and pepper to taste.
- Serve cold or at room temperature.
