Lamb Souvlaki
Ingredients
  • 1 lb. boneless lamb, cut into cubes
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons fresh oregano leaves, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Steps
  1. In a large bowl, combine lamb cubes, olive oil, lemon juice, garlic, oregano, cumin, salt and pepper.
  2. Mix well to coat lamb cubes.
  3. Cover and marinate in the refrigerator for at least 2 hours.
  4. Thread lamb onto skewers.
  5. Grill over medium-high heat for 10 minutes or until desired doneness.
  6. Serve with tzatziki sauce or other accompaniments of choice.
