- 1 lb. boneless lamb, cut into cubes
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 2 cloves garlic, minced
- 2 tablespoons fresh oregano leaves, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- In a large bowl, combine lamb cubes, olive oil, lemon juice, garlic, oregano, cumin, salt and pepper.
- Mix well to coat lamb cubes.
- Cover and marinate in the refrigerator for at least 2 hours.
- Thread lamb onto skewers.
- Grill over medium-high heat for 10 minutes or until desired doneness.
- Serve with tzatziki sauce or other accompaniments of choice.
