Jalapeno Pesto
Ingredients
  • 1/2 cup fresh jalapenos
  • 2 cloves garlic, minced
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup freshly grated Parmesan cheese
  • 3 tablespoons toasted pine nuts
  • Salt and freshly ground black pepper

Steps
  1. In a blender or food processor, combine the jalapenos, garlic, lemon juice, olive oil, Parmesan cheese and pine nuts.
  2. Puree until smooth.
  3. Season with salt and pepper to taste.
  4. Transfer to a container and store in the refrigerator until ready to use.
