- 1/4 cup vegetable oil
- 3/4 cup yellow cornmeal
- 1/2 cup all-purpose flour
- 3 tablespoons sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup buttermilk or milk of choice
- 1 large egg, beaten
- 2 jalapenos, seeded and minced
- Preheat oven to 375°F. Grease an 8-inch square baking pan.
- In a large bowl, whisk together the oil, cornmeal, flour, sugar, baking powder, baking soda and salt.
- Add the buttermilk or milk of choice and mix until just combined.
- Stir in the egg and jalapenos.
- Pour the batter into the prepared pan and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool for 10 minutes before serving.
