Jalapeno Cornbread
Ingredients
  • 1/4 cup vegetable oil
  • 3/4 cup yellow cornmeal
  • 1/2 cup all-purpose flour
  • 3 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk or milk of choice
  • 1 large egg, beaten
  • 2 jalapenos, seeded and minced

Steps
  1. Preheat oven to 375°F. Grease an 8-inch square baking pan.
  2. In a large bowl, whisk together the oil, cornmeal, flour, sugar, baking powder, baking soda and salt.
  3. Add the buttermilk or milk of choice and mix until just combined.
  4. Stir in the egg and jalapenos.
  5. Pour the batter into the prepared pan and bake for 25 minutes or until a toothpick inserted in the center comes out clean.
  6. Allow to cool for 10 minutes before serving.
