- 1 lb ground beef
- 1/4 cup dry bread crumbs
- 1 egg, beaten
- 2 cloves garlic, minced
- 1/4 cup chopped onion
- 4 cups beef broth
- 1 (14.5 ounce) can diced tomatoes with juice
- 2 tablespoons white wine vinegar
- 2 tablespoons minced fresh parsley
- 2 teaspoons Italian seasoning mix
- In a medium bowl, mix together the ground beef, bread crumbs, egg, garlic and onion until well blended.
- Shape into 1 inch meatballs.
- Bring the beef broth to a boil in a large pot over high heat. Reduce heat to low and add the meatballs and tomatoes with juice.
- Simmer for 20 minutes or until the meatballs are cooked through.
- Stir in the vinegar, parsley and Italian seasoning mix. Simmer for an additional 5 minutes.
- Serve hot.
