Ingredients
  • 1 lb ground beef
  • 1/4 cup dry bread crumbs
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1/4 cup chopped onion
  • 4 cups beef broth
  • 1 (14.5 ounce) can diced tomatoes with juice
  • 2 tablespoons white wine vinegar
  • 2 tablespoons minced fresh parsley
  • 2 teaspoons Italian seasoning mix

Steps
  1. In a medium bowl, mix together the ground beef, bread crumbs, egg, garlic and onion until well blended.
  2. Shape into 1 inch meatballs.
  3. Bring the beef broth to a boil in a large pot over high heat. Reduce heat to low and add the meatballs and tomatoes with juice.
  4. Simmer for 20 minutes or until the meatballs are cooked through.
  5. Stir in the vinegar, parsley and Italian seasoning mix. Simmer for an additional 5 minutes.
  6. Serve hot.
