Irish Soda Bread
Ingredients
  • 4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup butter, softened
  • 3 tablespoons white sugar
  • 2 eggs, beaten
  • 2 cups buttermilk

Steps
  1. Preheat oven to 375 degrees F (190 degrees C). Grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the flour, baking soda, baking powder and salt. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in the sugar and eggs; then add the buttermilk and stir just until moistened. Do not over mix.
  4. Pour into prepared pan and bake for 40 to 50 minutes, or until a toothpick inserted into center of loaf comes out clean.
  5. Cool in pan for 10 minutes before transferring to a wire rack to cool completely.
