Gruyere Cheese So…
Ingredients
  • 4 tablespoons butter
  • 4 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1 1/2 cups milk
  • 1 cup grated Gruyere cheese
  • 4 eggs, separated

Steps
  1. Preheat oven to 375 degrees F.
  2. Melt butter in a saucepan over low heat.
  3. Stir in flour and salt until smooth.
  4. Gradually add milk, stirring constantly until mixture is thick and bubbly.
  5. Remove from heat and stir in cheese until melted.
  6. Beat egg yolks and stir into cheese mixture.
  7. In a separate bowl, beat egg whites until stiff peaks form.
  8. Fold egg whites into cheese mixture.
  9. Pour into a greased 1 1/2 quart souffle dish.
  10. Bake for 40 minutes or until golden brown.
