- 4 tablespoons butter
- 4 tablespoons all-purpose flour
- 1/2 teaspoon salt
- 1 1/2 cups milk
- 1 cup grated Gruyere cheese
- 4 eggs, separated
- Preheat oven to 375 degrees F.
- Melt butter in a saucepan over low heat.
- Stir in flour and salt until smooth.
- Gradually add milk, stirring constantly until mixture is thick and bubbly.
- Remove from heat and stir in cheese until melted.
- Beat egg yolks and stir into cheese mixture.
- In a separate bowl, beat egg whites until stiff peaks form.
- Fold egg whites into cheese mixture.
- Pour into a greased 1 1/2 quart souffle dish.
- Bake for 40 minutes or until golden brown.
