- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- 2 teaspoons ground cumin
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/4 teaspoon salt
- Preheat grill to medium-high heat.
- In a large bowl, combine bell peppers, onion, olive oil, cumin, chili powder, garlic powder, paprika and salt. Mix until vegetables are evenly coated.
- Place vegetables onto the preheated grill and cook for 10-15 minutes or until vegetables are tender and lightly charred.
- Serve with warm tortillas and your favorite toppings.
