Ingredients
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 bell peppers, cut into 1-inch pieces
  • 2 zucchini, cut into 1-inch pieces
  • 2 yellow squash, cut into 1-inch pieces

Steps
  1. Preheat grill to medium-high heat.
  2. In a medium bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt and pepper.
  3. Add bell peppers, zucchini and squash to the bowl and toss to coat.
  4. Thread vegetables onto 8 metal or soaked wooden skewers.
  5. Grill for 10 minutes, turning occasionally until vegetables are tender and lightly charred.
  6. Serve with remaining balsamic glaze.
