- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon minced garlic
- 1 teaspoon dried oregano
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 3 bell peppers, cut into 1-inch pieces
- 2 zucchini, cut into 1-inch pieces
- 2 yellow squash, cut into 1-inch pieces
- Preheat grill to medium-high heat.
- In a medium bowl, whisk together balsamic vinegar, olive oil, garlic, oregano, salt and pepper.
- Add bell peppers, zucchini and squash to the bowl and toss to coat.
- Thread vegetables onto 8 metal or soaked wooden skewers.
- Grill for 10 minutes, turning occasionally until vegetables are tender and lightly charred.
- Serve with remaining balsamic glaze.
