- 1 large eggplant
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Cut the eggplant into 1/2 inch thick slices.
- Brush both sides of each slice with olive oil.
- Sprinkle with garlic powder, Italian seasoning, salt and pepper.
- Grill on medium-high heat for 3-4 minutes per side or until cooked through.
