Ingredients
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 orange bell pepper
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons balsamic vinegar
  • 1/4 teaspoon sugar
  • Salt and freshly ground black pepper to taste

Steps
  1. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  2. Cut the bell peppers into quarters and remove the stems, seeds, and membranes.
  3. Brush the peppers with olive oil.
  4. Grill the peppers on the preheated grill until charred and softened, about 7 minutes per side.
  5. Place the grilled peppers in a bowl.
  6. In a separate bowl, whisk together the garlic, balsamic vinegar, sugar, salt, and black pepper; pour over the grilled peppers.
  7. Toss to coat evenly.
  8. Serve warm or chilled.
