Ingredients
  • 1/2 head romaine lettuce, chopped
  • 1/2 head iceberg lettuce, chopped
  • 1 cucumber, peeled and diced
  • 1/2 red onion, chopped
  • 1/2 cup crumbled feta cheese
  • 1/4 cup kalamata olives, pitted and halved
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • Salt and freshly ground black pepper to taste

Steps
  1. In a large bowl, combine the romaine lettuce, iceberg lettuce, cucumber, red onion and feta cheese.
  2. In a separate bowl, whisk together the olive oil, lemon juice and garlic. Season with salt and pepper.
  3. Pour the dressing over the salad and toss to combine. Sprinkle with kalamata olives.
  4. Serve immediately.
