- 1/2 head romaine lettuce, chopped
- 1/2 head iceberg lettuce, chopped
- 1 cucumber, peeled and diced
- 1/2 red onion, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup kalamata olives, pitted and halved
- 1/4 cup extra virgin olive oil
- 3 tablespoons freshly squeezed lemon juice
- 2 cloves garlic, minced
- Salt and freshly ground black pepper to taste
- In a large bowl, combine the romaine lettuce, iceberg lettuce, cucumber, red onion and feta cheese.
- In a separate bowl, whisk together the olive oil, lemon juice and garlic. Season with salt and pepper.
- Pour the dressing over the salad and toss to combine. Sprinkle with kalamata olives.
- Serve immediately.
