- 6 large potatoes
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/4 cup white vinegar
- 3 tablespoons sugar
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 3 tablespoons vegetable oil
- Peel and cube potatoes. Boil in salted water until tender. Drain and cool.
- In a large bowl, mix together onion, celery, vinegar, sugar, salt and pepper.
- Add potatoes and stir to combine.
- Pour in oil and toss to coat.
- Refrigerate for at least 2 hours before serving.
