- 2 tablespoons olive oil
- 2 large onions, thinly sliced
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 6 cups beef broth or stock
- 2 bay leaves
- 3 sprigs fresh thyme or 1/2 teaspoon dried thyme leaves
- Heat the oil in a large pot over medium heat. Add the onions, sugar, salt and pepper and cook for 10 minutes, stirring occasionally.
- Add the garlic and cook for 1 minute more.
- Stir in the flour and cook for 2 minutes.
- Add the broth and bay leaves. Bring to a boil, reduce heat to low and simmer for 30 minutes.
- Remove bay leaves and thyme sprigs. Ladle soup into bowls and serve.
