French Onion Soup
Ingredients
  • 2 tablespoons olive oil
  • 2 large onions, thinly sliced
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 6 cups beef broth or stock
  • 2 bay leaves
  • 3 sprigs fresh thyme or 1/2 teaspoon dried thyme leaves

Steps
  1. Heat the oil in a large pot over medium heat. Add the onions, sugar, salt and pepper and cook for 10 minutes, stirring occasionally.
  2. Add the garlic and cook for 1 minute more.
  3. Stir in the flour and cook for 2 minutes.
  4. Add the broth and bay leaves. Bring to a boil, reduce heat to low and simmer for 30 minutes.
  5. Remove bay leaves and thyme sprigs. Ladle soup into bowls and serve.
