Fish Stew
Ingredients
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • 1/4 teaspoon ground black pepper
  • 2 (14.5 ounce) cans diced tomatoes with juice
  • 3 potatoes, cubed
  • 2 cups fish stock or clam juice
  • 1 bay leaf
  • 1 (6 ounce) can tomato paste

Steps
  1. Heat the oil in a large pot over medium heat.
  2. Stir in the onion and garlic; cook and stir until the onion is tender.
  3. Mix in oregano, thyme, and pepper.
  4. Pour in the diced tomatoes with juice, potatoes, fish stock or clam juice, and bay leaf.
  5. Bring to a boil; reduce heat to low and simmer for 30 minutes.
  6. Stir in tomato paste; simmer an additional 10 minutes or until potatoes are tender.
  7. Remove bay leaf before serving.
