- 2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup white sugar
- 1/2 cup vegetable oil
- 2 eggs, lightly beaten
- 3/4 cup milk
- 1 teaspoon vanilla extract
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease 12 muffin cups.
- In a large bowl, sift together the flour, cocoa, baking powder, baking soda and salt. Stir in the sugar.
- Make a well in the center and add the oil, eggs, milk and vanilla. Mix until smooth.
- Spoon batter into prepared muffin cups.
- Bake for 15 to 20 minutes in preheated oven. Muffins are done when toothpick inserted into center of one comes out clean.
