Creole Gumbo
Ingredients
  • 1/4 cup vegetable oil
  • 1/4 cup all-purpose flour
  • 1 large onion, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 2 tablespoons Creole seasoning blend
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon cayenne pepper
  • 6 cups chicken broth or stock
  • 3 bay leaves
  • 3 cups cooked chicken, diced or shredded

Steps
  1. Heat the oil in a large pot over medium heat. Add the flour and whisk until it forms a paste. Cook for about 5 minutes, stirring constantly.
  2. Add the onion, celery, garlic and bell pepper. Cook for about 5 minutes until vegetables are softened.
  3. Stir in the Creole seasoning blend, thyme and cayenne pepper. Cook for 1 minute.
  4. Add the chicken broth and bay leaves. Bring to a boil then reduce heat to low and simmer for 30 minutes.
  5. Add the cooked chicken and simmer for an additional 10 minutes.
  6. Remove from heat and discard bay leaves before serving.
