- 1/4 cup vegetable oil
- 1/4 cup all-purpose flour
- 1 large onion, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 2 tablespoons Creole seasoning blend
- 1 teaspoon dried thyme leaves
- 1/2 teaspoon cayenne pepper
- 6 cups chicken broth or stock
- 3 bay leaves
- 3 cups cooked chicken, diced or shredded
- Heat the oil in a large pot over medium heat. Add the flour and whisk until it forms a paste. Cook for about 5 minutes, stirring constantly.
- Add the onion, celery, garlic and bell pepper. Cook for about 5 minutes until vegetables are softened.
- Stir in the Creole seasoning blend, thyme and cayenne pepper. Cook for 1 minute.
- Add the chicken broth and bay leaves. Bring to a boil then reduce heat to low and simmer for 30 minutes.
- Add the cooked chicken and simmer for an additional 10 minutes.
- Remove from heat and discard bay leaves before serving.
