Creamy White Chic…
Ingredients
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 2 (15 ounce) cans white beans, drained and rinsed
  • 2 (4 ounce) cans diced green chiles, drained
  • 3 cups cooked chicken, shredded or cubed
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon oregano leaves
  • 1/4 teaspoon cayenne pepper (optional)

Steps
  1. Heat the oil in a large pot over medium heat. Add onion and garlic; cook until soft and lightly browned.
  2. Stir in the flour until lightly browned.
  3. Gradually whisk in the chicken broth. Simmer over medium heat until slightly thickened.
  4. Stir in the beans, chiles, chicken, cumin, chili powder, oregano and cayenne pepper. Simmer for 10 minutes.
  5. Serve hot.
