- 2 tablespoons olive oil
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups chicken broth
- 2 (15 ounce) cans white beans, drained and rinsed
- 2 (4 ounce) cans diced green chiles, drained
- 3 cups cooked chicken, shredded or cubed
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon oregano leaves
- 1/4 teaspoon cayenne pepper (optional)
- Heat the oil in a large pot over medium heat. Add onion and garlic; cook until soft and lightly browned.
- Stir in the flour until lightly browned.
- Gradually whisk in the chicken broth. Simmer over medium heat until slightly thickened.
- Stir in the beans, chiles, chicken, cumin, chili powder, oregano and cayenne pepper. Simmer for 10 minutes.
- Serve hot.
