Ingredients
  • 1/2 cup chia seeds
  • 1/2 cup coconut milk
  • 1/4 cup almond milk
  • 1/4 teaspoon vanilla extract
  • 1 ripe avocado, mashed
  • 3 tablespoons honey

Steps
  1. In a medium bowl, stir together the chia seeds, coconut milk, almond milk, and vanilla extract. Cover and refrigerate for at least 2 hours.
  2. In a separate bowl, mash the avocado until it’s a smooth paste.
  3. Stir in the honey and mix until everything is combined.
  4. Remove the chia pudding from the refrigerator and add the avocado mixture. Stir until everything is combined.
  5. Cover and refrigerate for at least 4 hours or overnight.
  6. Serve chilled with desired toppings.
