- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/4 cup sour cream or plain yogurt
- Preheat oven to 350°F. Line 12 muffin cups with paper liners.
- In a medium bowl, whisk together the flour, baking powder and salt.
- In a large bowl with an electric mixer on medium speed, beat the butter and sugar until light and fluffy, about 2 minutes.
- Add the eggs one at a time, beating well after each addition. Beat in the vanilla.
- With the mixer on low speed, add the dry ingredients in two additions alternating with the sour cream, beginning and ending with dry ingredients.
- Fill each liner about two-thirds full with batter. Bake for 20 minutes or until a toothpick inserted into the center comes out clean.
- Let cool in pan for 5 minutes before transferring to wire rack to cool completely.
