Chicken Quesadill…
Ingredients
  • 2 tablespoons vegetable oil
  • 1/2 cup diced onion
  • 1/2 teaspoon minced garlic
  • 1/2 pound cooked chicken, diced
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon chili powder
  • Salt and pepper, to taste
  • 4 (8-inch) flour tortillas
  • 3/4 cup grated Monterey Jack cheese

Steps
  1. Heat the oil in a medium skillet over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the chicken, cumin, chili powder, salt, and pepper. Cook for an additional 2 minutes.
  3. Place one tortilla in a large nonstick skillet over medium heat. Sprinkle with one-quarter of the cheese. Top with one-quarter of the chicken mixture. Top with another one-quarter of the cheese. Place another tortilla on top.
  4. Cook until lightly browned on both sides, about 2 minutes per side.
  5. Repeat with remaining ingredients to make four quesadillas.
