Cheesy Hash Brown…
Ingredients
  • 1/2 cup butter
  • 1/2 cup onion, chopped
  • 3 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese
  • 4 eggs, beaten
  • 1 1/2 cups milk
  • 1 teaspoon salt

Steps
  1. Melt butter in a large skillet over medium heat. Add onion and cook until softened. Add potatoes and cook for 10 minutes, stirring occasionally.
  2. Preheat oven to 375°F (190°C). Grease a 9-inch pie plate.
  3. Spread potatoes in the bottom of the prepared pie plate. Sprinkle with cheese.
  4. In a medium bowl, whisk together eggs, milk and salt. Pour over potato mixture.
  5. Bake for 30 minutes or until golden brown and set in center.
  6. Let cool before serving.
