- 4 medium potatoes, cut into 1-inch cubes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup freshly grated Parmesan cheese
- Preheat oven to 425 degrees F. Grease a baking sheet with cooking spray.
- In a large bowl, combine potatoes, olive oil, garlic, salt and pepper. Toss until potatoes are evenly coated.
- Transfer potatoes to the prepared baking sheet and spread into an even layer. Bake for 20 minutes.
- Sprinkle Parmesan cheese over the potatoes. Bake for an additional 10 minutes or until golden brown and crispy.
- Serve hot.
