Ingredients
  • 1 tablespoon olive oil
  • 1/2 onion, diced
  • 1 bell pepper, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • Salt and pepper to taste
  • 8 ounces cooked chicken, shredded or diced (optional)
  • 8 ounces tortilla chips
  • 3/4 cup shredded cheese of your choice

Steps
  1. Preheat oven to 375°F.
  2. Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
  3. Add the garlic powder, chili powder, cumin, salt and pepper. Stir to combine.
  4. Add the chicken (if using) and cook until heated through.
  5. Spread the chips on a baking sheet. Top with the fajita mixture and cheese.
  6. Bake for 8-10 minutes or until cheese is melted and bubbly.
  7. Serve hot.
