- 1 tablespoon olive oil
- 1/2 onion, diced
- 1 bell pepper, diced
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/4 teaspoon cumin
- Salt and pepper to taste
- 8 ounces cooked chicken, shredded or diced (optional)
- 8 ounces tortilla chips
- 3/4 cup shredded cheese of your choice
- Preheat oven to 375°F.
- Heat the olive oil in a large skillet over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes.
- Add the garlic powder, chili powder, cumin, salt and pepper. Stir to combine.
- Add the chicken (if using) and cook until heated through.
- Spread the chips on a baking sheet. Top with the fajita mixture and cheese.
- Bake for 8-10 minutes or until cheese is melted and bubbly.
- Serve hot.
