Cheesy Corn Fritt…
Ingredients
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 large egg, lightly beaten
  • 3 tablespoons butter, melted and cooled slightly
  • 3/4 cup grated cheddar cheese

Steps
  1. In a medium bowl, combine the corn kernels, flour, sugar, baking powder, salt and pepper.
  2. In a separate bowl, whisk together the egg and melted butter.
  3. Add the egg mixture to the dry ingredients and stir until just combined.
  4. Stir in the cheese.
  5. Heat a large skillet over medium heat. Drop heaping tablespoons of batter into the hot skillet and cook for 2 to 3 minutes on each side or until golden brown.
  6. Serve hot with your favorite condiments or sauces.
