Black Bean Tacos
Ingredients
  • 1/2 cup black beans
  • 1/4 cup diced onion
  • 1/4 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • Salt and pepper to taste
  • 8 small flour tortillas

Steps
  1. Heat a large skillet over medium-high heat. Add the beans, onion, bell pepper, garlic, chili powder, and cumin. Cook for 5 minutes, stirring occasionally.
  2. Add salt and pepper to taste and cook for an additional 2 minutes.
  3. Warm the tortillas in a separate skillet or in the microwave.
  4. Divide the bean mixture among the tortillas and serve.
