Black Bean Fajitas
Ingredients
  • 1 red bell pepper, cut into strips
  • 1 green bell pepper, cut into strips
  • 1 yellow onion, cut into strips
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 3/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 2 cans (15 ounces) black beans, rinsed and drained

Steps
  1. Heat the olive oil in a large skillet over medium-high heat. Add the bell peppers, onion and garlic and cook until tender, about 5 minutes. Add the chili powder, cumin and smoked paprika and stir to combine.
  2. Add the black beans and season with salt and pepper. Cook for another 5 minutes or until heated through.
  3. Serve with warm tortillas or rice.
